Bougatsa pastry gained popularity all over Greece from North to South after the Asia Minor destruction it was branded “made-in Serres” as in Northern Greece a significant number of refugees from the Asia Minor were accommodated

 

Bougatsa was especially popular in Thessalonica, all these years.

In 1917 the Guild of pastry of Thessalonica was founded and two years later it assembled 51 members!.

 

After 1922, the distribution of bougatsa in Greece is rapid. Today, bougatsa is a desirable snack with devoted fans and its future seems as promising and rich as its delicious flavour
